David Bouhadana

David Bouhadana’s fascination with Japanese cuisine began at an early age and grew into a lifelong pursuit of its craft, culture, and traditions. What captivated him was not only the food, but everything behind it: the discipline, the precision, the respect for ingredients, and the constant pursuit of improvement.

For David, sushi became more than a cuisine. It became a way to connect with people, express creativity, and invite others to experience the artistry behind the craft. Today, that same curiosity and devotion live at the heart of Sushi Dojo, where every detail reflects a lifetime spent pursuing the craft.

THE BEGINNING

Behind the Counter

David’s journey with sushi began in Boca Raton when he was just 18 years old. Hired as a waiter at a local sushi restaurant, he arrived for his first shift expecting to serve tables. Instead, circumstances unexpectedly placed him behind the sushi counter. What seemed like a simple change of plans became the moment that would quietly change the course of his life.

As David spent more time behind the counter, curiosity turned into something deeper. Every day revealed another layer to sushi and how much there was still to learn. He did not simply want to make sushi. He wanted to understand the craft. By 21, that desire had become a commitment, one that would soon take him beyond Boca Raton and eventually to Japan.

THE FOUNDATION

Learning the Way

At 21, David took his pursuit of sushi to the Sushi Chef Institute in Los Angeles, where he trained under Master Sensei Andy Matsuda. Recognizing David’s determination, Andy encouraged him to continue his education in Japan. Before he left, his teacher gave him one instruction that David would carry throughout his career:

“What you learn in Japan, come back and teach others.”

In Japan, David discovered that exceptional sushi went far beyond technique. It was a discipline shaped by patience, tradition, and a deep respect for every detail. More importantly, he learned that becoming a great chef was not simply about mastering what came before him, but carrying that knowledge forward. Those lessons would become the foundation of everything David built next.

THE NEXT CHAPTER

New York, New Dojo

New York became the place where David refined his voice as a chef. He worked alongside accomplished chefs at Morimoto, Hatsuhana, 15 East, and Sushi UO, sharpening his technique while developing an approach that felt distinctly his own. He believed sushi could honor tradition and precision without losing personality, energy, or the connection between chef and guest.

That vision led David to open the original Sushi Dojo in New York, a restaurant that brought his approach to omakase to life. It soon developed a devoted following and drew the attention of The New York Times, establishing Sushi Dojo as an important chapter in David’s career.

Recognition followed, with David named one of Zagat’s top chefs under 30 and later becoming the host of Shokunin, Eater’s New York Emmy Award-winning series celebrating the discipline and devotion behind the craft.

BACK TO THE BEGINNING

The Return of Sushi Dojo

Despite its success and recognition, David eventually had to let go of the original Sushi Dojo. The restaurant closed, but the meaning behind the Dojo never left him. It remained an unfinished part of his story, even as his career continued to grow and evolve.

Ten years later, David reclaimed Sushi Dojo and brought it home to Boca Raton, the city where his journey with sushi first began. Returning to the Dojo meant more than bringing back a restaurant. It gave David the opportunity to fulfill a promise he had carried with him since the beginning.
